One monitor is fine for now, add a 2nd in the future, it'll only cost $100 anyway. Nice mech keyboard and a nice mouse. SLI support, so you can easily add a 2nd 970 at any point. OC the i5 a bit if you want with that cooler. Nice black/white colour scheme throughout(other than a little blue, but it still matches).

As my builds are a fair amount under budget, you could get the keyboard/mouse that Duderino suggested, or a better CPU cooler like a Dark Rock Pro 3/Noctua NH-D15/Phanteks TC14 or even a nice AIO.

No... Definitely not. You can overclock Skylake locked CPUs now anyway so there isn't much point paying the extra for unlocked ones anymore. Add that to the fact that the 4690k is a generation older.
