Im currently running on 2 AMD Radeon 6800 Graphics Cards; 1 GB and am currently looking at GIGABYTE GeForce GTX 960 4GB WINDFORCE 2X OC EDITION. Any big changes? What will run better?

A 960 would be a lot better (Going by the specs of the two cards).
A 6800 is similar to a R7 250X, which is absolutely smashed out of the water by a 960.
The performance compared to a 960 is almost half. Considering you have a crossfire setup, the performance will be roughly the same on games that have really good optimisation for crossfire setups but overall you should see an increase in performance due to the 1GB to 4GB upgrade.
I would look into saving more and upgrading to a 970 though.
