Ok, so I got my ps3 out the other day which i have barely touched. It is the fat one and is only 40gb.
I've bought Gran Turismo 6. Says the game is 15gb. Cool, downloaded, installed.
I have 16gb free space when I check system. I cannot install the games updates because i need another 300mb. Are the updates really that big? I have plugged an external HDD in to see if I could install the game updates to that instead? But no luck. Is there anything I can do here to solve my issue.
Also how easy is it to jailbreak a PS3, so I could put the games on my external hdd that way? Is there a way to do it all legitimately?

Yes, GTA Games updates you need a high HD to save it onto. 30gb won't do.
Jailbreaking it's easy but depends who experienced you're with the console. I can upgrade my OFW Console to a CFW Console in one hour or so+. If you're going to JB your console save the games on your HDD on your MultiMan. Get a bigger HDD for your console so you can download the game.

It would be easier to just upgrade the HDD ,most 2.5" HDD's will fit.
Takes 10 mins to upgrade a HD.
Putting CFW on it will take longer and that's if you have the hardware tools to do it.
