What the point is of what I want to do:
I do a lot of game sharing deals offsite, so I get all of my games half price or less,

I have a private stream of my Xbox one on my s7 to watch download progress, so when downloads are all complete I can notify a family member at my home to switch out hard drives for me when I'm not at home.

I'd like to use the iPhone 6s to remotely prioritise downloads

I know you can still use the messages features, store ect...

Currently on an
iPhone 6s & Samsung Galaxy s7 edge

Heres what I want to do:

I am at my girlfriends, my Xbox One is constantly on 24/7 at my home,

Is there a way for me to connect to my Xbox One, the console itself, via say a VPN service, which would put my Xbox One & phones on the same network

Obviously because when you access Smartglass it only checks for consoles on your current network, I am not on the network that my Xbox One is on.

Official or 3rd party software is acceptable,

100 rep for a solution

The idea I have is along the lines of how pirates would play with their friends on Minecraft using hamachi, technically putting them both on a lab at different locations

Setup a VPN server on your local network and connect to it from your phone from a different network or mobile network. It'll allow you to be on your local network and you can connect to your Xbox One through SmartGlass.
There's simple guides on how to set one up on a Windows 7 or 8 PC out there.
