I've been trading for the past 2 months and have recently acquired 2 factory new Karambit Dopplers and have no idea what to trade them for? Advice?

Firstly, you're a very lucky guy as I've had 0 luck with gambling skins however much I try. But I couldn't find anything exactly for the $640 those are worth, but your best bet is to either cash out or just keep going up (so aim for two FN karambit fades or a FN Akihabara Accept)
