Hey guys, I'm probably just being stupid or something but is this incorrect or not?
"Why wouldn't you?"
It's annoying me because I'm pretty sure that says
"Why would not you"
which doesn't make sense...
Any help much appreciated

It's because you're not reading the words in the correct order. It wouldn't be " Why would not you" it would be "Why would you not".
Not stupid though, good question.

So is it still correct to say "Why wouldn't you?"

yes if it's used in the right context.
Say for ex: HIM: "Should i take this job"
HER: "Why wouldn't you?"
