I will be using this rig to play CSGO, Rust, GTA V, GMod and etc
I know every gaming build needs an SSD but I will upgrade soon for one.
Can someone help me and tell me if this is good or not?

Better. If you can spend the extra £40 for the 6GB GTX 1060, do it.

Is there that much of a difference between the 3gb and 6gb version? I assumed they performed pretty much the same.

Well, the 3GB GTX 1060 has half the VRAM for a start. It has one SM disabled, so 128 less CUDA cores and 8 less TMUs. So, it's not even really a 1060, more like a 1060 SE. The 6GB variant is always worth the extra, if possible, but the 3GB is fine for a more budget oriented system.
