Ok, so I received my first payment today from work but I'm actually waiting on 2 different payments to come through and I wasnt meant to get paid from work until the 28th. I'm with Ulster Bank in the UK does it take time to see the transaction details?

It says now! Although I have received less money than I should have for working, is there cut off dates for payment?

There are always cut off days. Let's say you start work on Wednesday and you get paid every Monday. Your cut off will usually be Friday or Saturday. I'm working with a company where we have to have our hours in Wednesday and get paid Thursday. Ask your boss about specific pay dates and hour due dates.

As far as transaction details and banks, it depends on the bank. I go through Key bank (USA), and every time I buy something it tells me that second exactly where the money went.

That's right. But in UK it could take up to 3 working days for it to show something going into the account but usually is the same day or when the transaction happened. Idk why it's stupid. It shows things going out just not in all the time. Best bet would be to call the bank Monday and get more details. Or as 002 said ask your employer about it.
