I've completed the TOTW Tradeable task so I've got a pack which when opened I will be guaranteed a tradeable TOTW player however it just sprung to mind shall I wait until TOTY has been released then I'm guaranteed a TOTY player!

I don't think it works for TOTY or orther TOTW..
Ea just code the packs for that week or moment.

But it's says will guarantee a TOTW (when pack is open) so surely I can at least wait for a decent enough TOTW

You only get a TOTW player. TOTS/TOTY/MOTM/POTM etc are not included in this.
You are best off waiting for a TOTW which has multiple high rated players.
Most people will either open them straight away or wait till 6pm Wednesday to get a IF who will be high priced since he is brand new.
Just wait for TOTW which has 2 or more of the "Tier 1 players" such as messi,neymar,suarez,ronaldo etc.
I have 4 packs of TOTW (tradable) I will keep mine till I find a TOTW I know I can make atleast 1m + if I pack one of the higher rated players.

CORRECT, read the pack description, im not saying i think you cant, it wont work that way
