Sun and Moon starts off really easy, I would say it is pretty much holding your hand for the first few hours then you get thrown into Totem Battles for your Trial Challenge and you ask yourself what layer of hell it came from. You can be over-leveled by 10 levels and Totem Pokemon can still wreck your shit in if they're not taken out as quickly as possible. Other than that, play it like you would the other Pokemon games. Go out and explore the islands, capture whatever you want, level up however you want and if you get into the competitive scene or even the in game competitive such as Battle Tree (after you beat the main story) shoot me a PM and I can help you with IV breeding, EV training and adjusting with the meta and general team building.

Edit: Once Pokebank is updated to support Sun and Moon, I can send you over some Pokemon "rejects." that I have saved on X/Y and OR/AS. They are bred Pokemon when I was trying to get perfect IVs. They're "rejects" because they're not perfect IVs for competitive, but they're much better than what you would catch in the wild. They have their Hidden Abilities or regular abilities (only if their regular abilities are better than the hidden.) Nature that would benefit them the most and for the most part perfect 5 IVs. EVs are the only thing you would have to do however correct nature and 5 perfect IVs are more than enough to give you an advantage over any Pokemon you catch without S.O.S chaining.

They're still the same? If you mean Aloan forms, you can still get the regular Gen 1 Pokemon. Gen 6 too changed the forms of previous Pokemon by introducing Mega Pokemon but you don't have to use them. Same thing with Gen 7. Once Pokebank is updated you can transfer over any Gen 1 Pokemon and they'll remain how they are. They only did Aloan forms because players wanted something new, with some people complaining about how Megas are "too OP" or "broken" so Game Freak introduced Aloan forms and then now we got Ultra Beasts since "Megas are ruined the meta" lol
