Wondering if anyone can help.
So, when recording something with OBS, every 20 seconds or so the recording will go from smooth 60fps to like 20fps, OBS itself isn't show dropped frames, the fps counter at the bottom of OBS sits at 60 throughout, whatever game im recording, plays fine with no issues. the stutters/drops show in the recording ONLY.
I've tried different settings and resolutions, along with recommended settings for recording etc and the issue stays regardless.
All drivers are up to date, using OBS Classic, up to date also. Using an Intel Xeon E3 1231v3 / 980ti / 8GB RAM
I've also ran task manager alongside recording and CPU/RAM/DISKS don't spike to 100 or anything when he drops happen, they all stay the same, consistently, temps are also fine, does this with demanding and non-demanding games. nothing appears to be causing this, cant get round it.
Can anyone recommend a fix or even a different program i could use to rec?

Now are you streaming or are you just recording. Streaming can have a effect on server CPU's mainly why they aren't used, and they don't have little to any overclocking abilities. This is why the consumer grade CPU's are better fitted for non workstation builds.
Try using a different screen recorder, or streaming app and compare results.

Recording. Happens when streaming but a LOT less, when streaming its barely noticeble
