What is your budget and currency? - 1900-2000GBP ( can do around 100-200 more if the part difference is much better for value )
Do you need a monitor? - No
Do you need a keyboard? -No
Do you need a mouse? No-
Do you need an operating system? no-
What will you use the PC for?- Gaming
Intel / Amd ? - INTEL
i would like to have the build around this case or something similar [ Register or Signin to view external links. ]
And would maybe like to go with two GPU's
and maybe a all blue and or white colour scheme

Spending that much to play on a 1080p monitor would be stupid. I included a 75Hz 1440p monitor but you could go 120+Hz 1440p, or 4k instead if you wanted. SLI support so you can add a 2nd GTX 1080 at any point if you want. Get an NZXT Hue+ or something if you want. You can get an AIO liquid cooler instead of air cooler if you want. Fractal Design Kelvin S36 would be my recommendation.

Not worth the £20-25 extra for the 7700k. It performs almost identically. You can get the 7700k instead if you want but it runs hotter than the 6700k. I'd just stick with the 6700k and save some money.

I switched out the 1440p monitor for a 4k one i own it and have so issues, you can get it up to 72hz and the overall display is amazing. Makes more sense having 2 1080's. Would suggest a HB SLI Bridge as well
