Battersby wroteMitochondria wroteBattersby wroteMitochondria wrote 2000GBP is a lot to work with, and you would be better off building a new system.
But if not building a new one, use your H440, SSD, and Power supply. You can sell the rest of it locally or online, and at least make some money off your old system.
Total budget you want to spend?
preferred Aesthetics?
Will you overclock?
Do you want a new monitor to replace both of your old?
What games will you be playing the most?
Any other uses other then gaming?
I'm gonna keep with my case, SSD, HDD and PSU. My total budget is 2000GBP. Iont have any preferred aesthetics. I will overclock. I do want another monitor but would like it to be 144hz as I play a lot of Multiplayer FPS games. Will be playing games like CS GO, Battlegrounds, BF1 and a bunch of single player games (both old and new). No other uses than gaming.
Why do you think I would be better off starting a build from scratch when I can reuse part from my current build that are perfectly fine (just curious)?
2000GBP is enough to easily build a new system, like i said you can sell off some of the old parts for profit, and just keep what you need. You just wanted to upgrade, so here are a couple lists.

More storage, two monitors, sell your lower refresh rate one if you want, just more money for you. 1080 would be better in 4k to be fair, but you wanted high refresh rate.
Save yourself some by dropping the SSD, and HDD, opting for a 1070 8GB and the price will be around £1550.

Ryzen alternative, relatively the same, you will get better results with intel in single threaded workloads and AMD wins in most cases on multi-threaded workloads this has been proven, the new updates toward Ryzen have shown more stability and a little better performance. The 1700 can be overclocked, and be sub par to the 1800x which competes fairly well with the 6700k/7700k.
Replace the fans on the AIO cooler.
Thanks for both lists, appreciate it. I was thinking of selling my current 144hz monitor, picking up a 1440p 144hz and keeping my lower refresh rate monitor as I only use it for browsing internet etc. Yoy got any suggestions for good 1440p 144hz?
a bit pricey running into the 550GBP. The Dell S2716DG is what I am currently using there are lower priced options, for similar with higher refresh rates.

No need for a new motherboard. No reason to replace case and/or PSU. Don't get a Founders Edition 1080Ti, get an aftermarket one when they're available.
