What's up everyone?!
I finally rose from the dead again and I want to get back into pc gaming.
I built my last two gaming computers but i have been out of this for well over 2 years. So i need a little bit of help from you all. My budget is open. Let me just tell you what i really want to do.
I want to be able to play most games newer and or older on three screens at any given time wether im hardcore gaming or just casually gaming. Also i want to be able to render and edit videos somewhat quickly, and be able to use photoshop to get back into it. I already have three 1080p monitors (asus) so i just need a computer. Have all my peripherals as well still.
Here is what i was wanting to do but im not sure if it is overkill or not.
CPU - Intel Core I7-6950X 3.0GHz
CPU Cooling - Deepcool Captain 240Ex
Motherboard - ASUS RAMPAGE V EXTREME
Memory - 128GB (8x16GB) DDR4 2133MHz
Storage - SAMSUNG 960 EVO M.2 NVMe 500GB, 512gb SSD, 2TB 7200 RPM
Graphics Card - Dual Geforce GTX 1080 Ti 11GB And High Bandwidth Bridge
Power Supply - EVGA 850 Watt 80 Plus Bronze
Operating System - Windows 10 Pro 64 Bit
Networking - ASUS PCE-AC68
Capture Card - Elgato Game Capture HD60 Pro

You definitely do not need an X99, 128GB Ram, and an i7-6950X to play games. Go for a i7 7700k with any old Z270 motherboard that meets your spec with 32GB of DDR4 with a higher clockspeed. Skip out on the second SSD and just get a larger M.2 drive and a larger traditional HDD. You can also skip out on the Elgato Game Capture card, unless you are really looking to record console games, but with a PC of this caliber I am going to assume you are no longer playing consoles. With PC you can simply use OBS or similar software to stream and record what you would like.

Just get one 1080ti. It is a monster of a card and will be able to handle whatever you need it to.
