So a VPN I have at the moment is paid but only has servers based in the USA and the Netherlands, When I connect through the VPN to my xbox I either get strict or moderate NAT type and I am connected to my VPN all by Ethernet and without my VPN turned on my speed is 200mbps, I aint tested with it on, i'm just looking for the best VPN that will get me an open NAT type...

You'll always have a moderate NAT type, if you're connecting to your VPN via your computer on Ethernet. I'd suggest running OpenVPN on your router and using a VPN like that. Express VPN has a router configuration.
