There's actually a spray that you can put on the outside that prevents stains (Vans has one specifically for their material of shoes, other brands probably do as well.) And for stinky shoes just spray them with some deodorizer spray, you can find this at any footwear store.

For scent I use fabric softener sheets under my insoles. I wash with microfiber cloth and sometimes polish depending on the material. Black pairs are easier to clean, they don't show grass stains easily. You have to put in some work with a rag, circular motions to get the grass stains off. Preferably just water so you don't harm the material.
