Im currently on installing GTA 5 now, both discs, could anyone point me in the direction of what to do next? to get online and with a menu, very new to this only had my RGH a few days so struggling a bit. thanks in advance.

Find a menu you want to use and set it as a plugin on dashlaunch. As for getting online you'll need real gold or do what I prefer. That is, join a club. IGN I believe is the biggest club. After that just join off club members and you're set to go.

You'll need the title update, comparability packs, and the dlc they released for the game. I would just download them from xbl if you are online.

Yes, you are able to download any update or packs that you need to play online.
