My mom is a teacher and she can get all of the schools programs installed onto our computer. Latest versions of Pinnacle (Yes, our school has video editing software), Adobe Photoshop, and more.

They get education versions of software meaning instead of costing $399, Photoshop costs $50. Since the school is also likely running a client-server network, only 1 installation is required onto the server and AD. Therefore only one license is needed.
The reason nobody is allowed to watch the installation of the software will be purely so that they can't copy down the licence key.
