so I'm having the hardest time choosing between the galaxy 8 and the iPhone X I don't know which one I should get I know the I phone x is going to be harder to get but is the pay off bigger than the galaxy s8?

The pay off is not worth it at all. Samsung and Apple will likely release better phones later next year. So NO do not consider the iPhone X if anything go for the 8.

Low-cost good perf = Samsung
Ridiculously high cost good perf = Apple
