Just upgrade from stock cooler and see if you can get a better overclock from the R5 1600. I'd probably grab a Be Quiet Dark Rock Pro 3 or NZXT Kraken X62. Any other 280mm AIO would do fine as well, so like a Corsair H110i/H115i or EVGA CLC 280 if you want an AIO but dont want to spend so much for the X62.
One last question, I'm going to pick up the kraken x62, what about even upgrading the motherboard? Sticking with the r5 as iv read online that the b350 motherboards haven't got the best overclocking capabilities, what's your thoughts on this?

The Prime B350 Plus is a pretty good B350 board. Even mediocre B350 motherboards are fine for Ryzen 5 with an overclock. You're going to be limited by temperatures before the motherboard would limit you in any way. It's just cheap B350 motherboards with no/poor VRM cooling that are an issue. So I wouldn't waste the money on a new motherboard.
Make sure not to pay more than $150 for the X62. Also remember you can easily get away with a cooler cheaper than $100, you're paying quite a bit for aesthetics with the X62. It's a good choice if that's the cooler you want though, and dont mind paying the $150 for it.
