I have jailbroken PS3, I want to be able to still host MW2 challenge lobbies and thats basically it. I'm not sure if I can change patches once I update. So please correct me if I'm wrong but if I want to continue to host, I should delete all my pkg files, and don't touch the MW2 file with the modded patch and I should be fine as long as I don't delete the MW2 savadata?

If you already have the patch on your hard drive and you can host now all you need to do is update to 3.56 and you will still be able to host with no issues although you will not be able to change patches until a new jailbreak comes out or until someone injects modded patches into .pkg update files. So choose the patch you upgrade with very wisely.
