I know there isn't a jailbreak available yet, but I have an MC model and am wondering if it is still possible to downgrade to 3.1.2 so I can jailbreak it (will it work/is it worth it)

yes it will work but your might want to create a folder to save all your music and stuff to because sometimes when you restore the new version (the downgrade version) you lose everything.

i'd also suggest that you downgrade to 3.1.1 because more of the cydia apps are working with 3.1.1 rather than 3.1.2

Well the thread title clearly says its a 3rd gen model, with that being said I assume I can't downgrade to 3.1.2 if its a 3g mc model?
