Xex is only spelled 'XeX' in XeX Menu, which is a program for your homebrew console allowing you to run discs without the disc (+ more). An xex is the Xbox 360's version of an exe. A default.xex is the single player for a game, just as the single player on PC would be called "Modern Warfare 2.exe".
Sorry if that's a little confusing.
