I know someone gets the wunderwaffle, etc. But you get that one achievement called "ensemble cast" or something, what happens next? Can you select to play as them? What is the purpose of it?

there is generally no purpose to an easter egg, except to hint at what might come next...and the ensemble cast easter egg hints that we will see(and probably play as) tank and crew
