How come when I plug both HDMI and VA cables my xbox doesn't show anything when I go to HDMI on my monitor? Once I take out the VA it works. How can I get it running with both plugged in?

You cant thats why theres a tab on the av cables to keep you from plugging both in because it confuses the system

My guess is your using it for a headset, this is easy to solve but will take about 14 mins
btw i did this with my turtle beach x11s first get a kitchen knife,then on the AV cable slice off the tab ( it will take some time ), insert your AV cables and HDMI ( it is sort of a struggle but not much ) Job Done 8)
Note: you do this at your own risk but it worked fine for me as long as you dont SCREW UP!!
Or if you got cash to blow just buy a AV to HDMI adapter ofF Amazon
