I recently jailbroke my iPod and after downloading an IAP Cracker, I was prompted to reboot my device. Then my iPod froze on the apple loading screen so I had to recover it But I found a way out of this hassle!
If told to "Reboot Device" DO NOT CLICK! Instead, click the home button. From there power OFF your iPod. Then just plug it up to your PC/Mac and load up RedSn0w and use the "Just Boot" option and it should work fine.
THIS IS MEANT FOR VERSIONS OF 5.0 +
If you still have the frozen loading screen have no fear! Try one more thing!
While its frozen, just press and hold the power & home keys. Wait for the screen to turn black and on RedSn0w, quickly "Just Boot" it (put your iPod into DUF mode)if you do the directions correctly, RedSn0w will pick up your ipod and it will load up normally. If not you will possibly get the recover mode, in which you can use TinyUmbrella or another program to get out of, hope I helped
