It depends what kind of play style do you want to do? Thief, warrior, mage , archer be specific.

I was wondering this too, I was thinking mage, but my friends say mages are pretty boring.

I like mage because there are a lot of different skills for it, destruction, illusion, conjuration and restoration. It all depends on which ones you use most and what armor you have as a mage also if you use staffs or not. The thing i find most fun is duel wielding destruction or using a conjure spell then switching to my bow. But if your going to duel wield destruction you will run out of magicka fast if yours is low so i recommend having enchanted armor that either fortifies it or increases the regeneration speed.

If i were you then i would be a nord. You could have a spell in your left hand and a sword or war ax in your right hand. And if you want to use a shield you could favorite it and swap it with the spell when ever you feel necessary .

You can do the spell/sword with any race.
I perfer dagger/bow so archer its really fun and sneaking through quests can make it easier
