Personal i bulit my own and went for this:
Graphic card: Nvidia Geforce 9800 GX2 1GB
Processor: Intel i7 six core (32Ghz)
RAM: 12GB DDR3 cooled
MotherBoard: Asus Maximus Iv Extreme
Hope you like it cost me 1,800GBP

Looks pretty damn good! Far better than mine anyway.
I'm almost certain you'd be able to play most games on high without any problems.

Over its' time being built about 4-5 thousand pounds and then I am from ireland some about 6 tousand euro ! although i bught it over three years and it was a custom build and my dad would get parts for nothing as he was head of the Microsoft seattle and Ireland Tech section and coding for a few years ! Stopped because of a car crash </3

heres three boards you could use:
Crossfire:
SLI:
3-Way SLI:
I would personally go with ASRock Fatal1ty its a nice board
Crossfire:

SLI:
