just depends on if they care enough to peak at your info,
i only know this because i hosted a proxy and i code ruby [gems] and i have seen personal info come through

examples: i seen phone numbers, email addresses, text messages(full ones), the IP address that they are on(if on wi-fi), YOUR PHONE NUMBER. there isn't anything they cant see.

if you can do it on your phone, they CAN see it
