If I jailbreak my iPhone but restore it, will Apple find out and void the warranty?

No if you jailbreak any idevice as long as it is restored before you give it to them they will not know that it was jailbroken at one time

Most of the time they will repair or replace your device as long as you restore before visiting an Apple store. But as long as your iPhone can at least power on, you should be good to go. It's very unlikely that once restored, Apple won't bother to look any further for jailbreak history. And yes, if you don't restore as an entirely new phone it is possible to find jailbreak history, but again that's very unlikely.

Jailbrakeing doesn't void your warranty as Jailbrakeing is legal. I have taken my iPhone 4 into AT&T with it jailbroken and nothing happend.

taken from my own experiences.

If you have an iDevice jailbroken. and wish to return it if it develops a fault, restoring and removing the jailbreak before is essential, this way apple will replace / repair the device. If apple see's you have the device jail broken, they will refuse.
