First of all its easier if you change your button layout to tactical then you go up to a zombie and press Y B Y or Triangle Circle Triangle rapidly.

Or you can press R2 And circle to create a knife lunge or RT and B

1. go up to a zombie
2. have your crosshairs change to red
3. press Y and then B right after ^
4. go to where you are going to do the knife lunge
5. aim down your sight at the zombie and then knife

there you go enjoy!!!!
