Your voice is annoying and adding the music was even worse I couldn't even hear you.. Just get a new mic, and don't add music

In much less than 9 minutes here we go.
AND gate, one side inverted with the input as a switch and the other inputs connected to the pressure plates and the output powering the pistons.
Done.

Please give up making videos.
You have a sh*t microphone, and on top of that you add music into the video. If I want to listen to music I will go to my iphone. I came here for a Minecraft tutorial, not to listen to sh*t music.

Here's what's going on in case a 9 minutes video isn't worth your time.

I've used one set of pressure plates for this but you'd want to use two. Those are connected to one input of the AND gate (BOTH sets to the same input if you're using 2 sets of pressure plates) then the output of that is inverted and sent to the pistons. The lever controls the other input.
The redstone on top of the AND gate detects if both inputs are ON, the lever is INVERTED so it is on by default and the pressure plates turn on when you step on them making both inputs true.
If you flip the switch it turns OFF as it's inverted which makes it impossible for the door to open.
I'm not saying OP should stop making videos, I'm just saying that 9 minutes is an outrageous amount of time to show something so simple.
