Ok so my Dad purchased an SD card that when inserted into a Nook Color roots it into an Android Tablet running Gingerbread. My question now that it has been rooted what different can be done with it?

You can't do much more, just use some special apps and softwares.

Like special editing apps (For hipsters only) and some other softwares like for an example you can use Samsung's system for let's say an HTC phone.

You can change the whole layout of the phone like you said you are now running gingerbread but you can run other softwares as well. Look into what root you have and you can download apps that allow you to fully customize the sh*t out of your tablet or phone

Most people root their phones so they can download/run different app's and run different ROM's
