Once, you've completed them, I accicdently forgot to "reset" one and is it possible to reset?

Yes and no,

If you sign out of your xbox live account, but without closing the guide sign into another profile, even if it doesnt have live, then, once on the 2nd profile close the guide and play a custom game for like 10 seconds, after 10 seconds or so, sign out of the 2nd account and back into the account you use that you want the challenges reset on,

once back on that account the challenges will be reset.. BUT you must do the challenge from start to finish, if you try to end the game, itll come back up complete
