If I was to sell coins through PayPal. Have I got any protection if I go first and get scammed and have I got protection if they chargeback?

Make sure they add a note "For virtual items"
Then if they chargeback it will be denied as paypal does not hold responsibility for virtual items.

What happens if I go first and then they don't pay. I'm just covering every aspect.

The seller should never go first unless dealing with a TRUSTED member. If your buyer is not happy about going first there are pleanty more people out there who are looking to buy coins.

If it was a big sum of money, do sellers normally try to get them in irl shit?

The seller never sends the goods first, under any circumstances, no matter who the buyer is.

In the payment, they have to add a note saying 'I understand that this is a virtual item for which there is no refund available' or something along those lines to cover all bases.

As long as you do that ^, you should be fine.

Do as I said before, and what "JesusChrist" just said and you will not be scammed even if he charges back. Just make sure he sends it as a gift and add the note we specified. If he doesn't add the note refund and tell him to add it until he does so.
