Any popular player in a popular league, there is no real 'best time' when everyone is online, you will get less profit per player as there are more people bidding but there will be more on the market. At night when everybody is offline, there will be less of the player on the market but less people competing with you to buy the players.

If I were you, I'd start buying players from around 8pm-11pm, because when there are less people to buy the players on the market, people tend to lower the prices a lot just to sell their players. Once you've bought a player, put him in the trade pile and put the buy now price of the player you're about to sell higher than the price you bought the player for, and then put them up for 12 hours, and some of the players should sell by the morning. If they don't, don't constantly lower the buy now so people will buy it, just put it up for 1 day, and see if they sell. Patience is key. Also, if you're going to attempt profits with expensive players (50k+) make sure that you work out how much profit you're making, because if you buy a player for 100k, and sell them for 105k, you are actually making 250 coin loss - Due to EA's 5% tax rule.
