From what i have read and learned it appears the human eye can only process about 30 fps so why are video games trying to go up in the 40's 50's and even 60 fps? To me it seems superfluous. What do you think?

Subconsciously, you notice it. The same way subliminal messages hidden in films work. You can't see it, but your mind still registers it, creating a smoother feel to it.

The human eye can see well over 100 fps. One of the main reasons people say 60 is better than 30 is because when a game drops about 20 frames, when you play on 60, the drop isn't too much. When you play on 30, the drop is horrible.

It's like watching a 1000FPS game slo-mo clip on YouTube. It's sooo smooth but in reality YouTube only goes to 30FPS.

That's a myth. The human eye is not limited in FPS. What your eye sees is what is limited by your screen or graphics power.

That's because the footage was RENDERED in 1000 FPS. 1000 FPS at normal speed is completely useless. The point of high FPS cameras is to better see the details of slowed footage. Once the footage was been slowed down with the high FPS camera and is saved, the compression FPS rate as which it is shows is irrelevant because it won't be affected.

I read that the eye had a higher number than thirty but I wasn't sure which to believe. But the more fps the slower it looks so would more not be bad?

Realistically, the eye can see much more than 30 FPS. It just depends on what you're viewing.

Have you ever watched a soap opera? Well, they run at 48 FPS. The average movie runs at around 25 FPS. But you can definitely distinguish the difference between the two if you look close enough.

Higher FPS isn't a bad thing, when it's used in the correct way.

I can tell the difference between 30 fps and 60 fps when I'm playing Minecraft pretty easily.
