So, I want to know if there's a way to reset all the quests of DLC, because I went to the vampires' side and I lost the opportunity to craft steel bolts and I really love to play with crossbow
I saw something like "Delete the Dawnguard - Load the game - Save the game - Install the Dawnguard" but I didn't because I don't wanna crash my save :~
If have a way to reset, how do I do it?

You can't really 'reset' it. The best way to do it would be to completely move the game save onto a flash drive. Your game should lose the memory & you should be able to start all over. =) If you want to only remove the dawnguard game save, you can't. Sorry. But if you would like, I'll be more than happy to send you a Level 20 game save. =)

Just go back to a previous game save before you did the quest.

I'm pretty sure that the uninstalling method works fine, if you think it will corrupt your save then first make a copy of the save on your PC or USB and then do it. If you don't want to do that method you will have to load a previous save dated from before you started the quests.
If you only want the steel bolts and crossbow you could always make a request on my modding service and we could just add a certain amount of bolts to your save

I don't know, I have a lot of things in that save And I really don't wanna to lose everything. I was thinking about just start the quest where the members of Dawnguard teach how to craft the bolts, but I don't know if it's possible :~

Maybe I'll do this method to be sure. And load a previous save hurts so much because I'll lose a lot of things ((
I was thinking in make another request, but with some kind of console command that reset it

Another thing, like Katsumi said, you could put the gamesave on your USB and throw it into Horizon or something, and add your bolts and crossbow to your inventory.

I found this console command (SetStage <quest id> <stage value>), could it make anything about craft bolts?

player.additem 02000BB3 999999 is the only safe code i can think of. I had a search around the web and it looks like nobody has been able to reset dawnguard with setstage and with my past experiences setstage is a pretty buggy command, you could try writing up some codes but i wont guarantee that they will work.
