Did you do this step?
Open up Terminal.app and type chmod a+x
Don't hit return
then drag start_server.command into the terminal app and hit return.
I'm not a Mac user, i found this online, if this doesn't work reply and i'll try to help as much as i can.
Also when you renamed the "craftbukkit.jar", did you type .jar? if you did, delete it, the .jar is already there it's just hidden, just rename it to "craftbukkit"

No just getting onto a server not making one. I gave up on that
