Hunt Whales and sharks, alternatively Loot boats for rum and sugar, they sell for a lot

You could also try looking for treasure, go diving, or just go to the jungle and repeatedly kill red howler monkeys and white jaguars

And if you see a white whale (Blue whale icon on the map) kill it, it will sell for 4000
