Although I do love the story and the difficulty of Fallout New Vegas, I feel like I had more fun playing Fallout 3.

Fallout 3 by a longshot, NV was fun but never really got into it like F3.

In my opinion Fallout 3, you play your character from birth & you get to know your family before you're thrown out in the wastes & the story line is more realistic. although New Vegas has better graphics & a few more weapons plus hardcore mode

Oh lord. I have been a huge Fallout fan over the past few years and I can honestly say I enjoyed Newvegas a bit more after my 3rd playthrough. I always considered Fallout 3 to be better because of the radio stations. I loved GNR with a burning passion, I was a bit let down with NV because the radios were just slow songs and didnt keep up with what you were doing as much as Three-Dog would. However I have now played both on PC and Newvegas is my favorite.
If you just clear all of the expectations you have developed in your mind before you start playing Newvegas, you will have such an amazing time with the game. The story starts out slow, but after level 10 you can start exploring much more. I have a playthrough with 60 hours right now, I am level 50, and still have over 32 missions to do, and 2 more DLC's to finish. I also have some mods in like custom radio stations, project Nevada, etc. This makes the game 10x better, and on PC I can play at full 1080p 60fps. On Console I would always be afraid of bugs but I have console commands on PC to help me get through those bugs. I have an anti-crash mod to stop the crashing, a new auto save plugin. Fallout on PC was much better than on console.
If you can, purchase the PC version of both games, it will really show you the true way it was meant to be played.

Fallout 3 I think because the story was great, the side quests were better, and the wasteland was much more fun, action packed, and interactive. I felt you did a lot of waiting and boring things in Fallout New Vegas, I did not enjoy the wasteland atmosphere in NV either.
