So I had GTA on my previous xbox 360 on my main profile with my rank and all my stuff
will it be possible to carry over everything i had on the 360 to the one if i am still using the same profile?
or would i have to just start all over

Yes, ALL of your data for everything transfers.

However, you'll have to unlock achievements for Xbox One games separately.
