I feel like it's going to be an awesome build and run games at max resolution plus last me for a good 6-7 years before I have to upgrade some parts

I would save money by getting a different case. You could also get a SSD drive if you did that which would make a huge difference on boot time for your OS, games, etc.

I would get the EVGA ACX Superclocked 780 Ti, the reference cooler is ok, but not the best.

So, let me get this straight.
You're going to drop over $2,200 on a sub-par build because "you don't need it to be fast?" Please, explain your logic to me. SSDs don't just increase boot times, they make literally every program you open run instantly and seamlessly, and that's not all. By the way:
-Overpriced MOBO
-Overpriced/overkill RAM that you will never use all of, ever
-Overpriced/oversized case
You're spending all of your money on bells and whistles instead of what really matters. That's what I think.
