so on more than one occassion now i have 2100 fifa points, and each time they never came through. so each time i went to them, thy checked it all out and confirmed it and refunded me everytime. However this time they wont refund me, and its frustrating as i dont have the points, and i wasted my money
are there any other ways i can prove it/ work around it?

it is, but ea said they cant check that, and im on xbox one so there isnt anything i can check on here and proove it

You can always contact Xbox Support and tell them the situation, I am sure they would be more helpful and refund the whole amount. They did that for me at one stage on FIFA 14.
