I have a 1997 GMC Sierra and when I was out yesterday I noticed that when I stepped on the gas and held it down, the oil pressure guage would go to 80 (highest number on mine), idling would be fine around 40. What could be the problems causing this. Thanks. also if it helps, the engine got louder for some reason too (could just be exhaust leak)

i have a SRT4 and it sits about 25 on idle and 30ish when driving. Yours seems to be high. also my dad has a 1967 GTX and his is running 80 so maybe its your oil your using ? idk

It's unpredictable on the road as when you are traveling between 45-60MPH it jumps between 20-80, sticking around the 70ish mark.

it seems like thats high. check youtube maybe or google it

When you turn your truck on in the morning, is there the normal white smoke stuff that comes out? About how long until it goes away? It very well could be a head gasket. It could also be just another horrible GMC design, they put the thing that reads your temp pretty much right in the exhaust so sometimes it will look like you are overheating.
I think it would be very un-likley that it would be the head gasket, but it did happen to my friend. To me it sounds more like an oil problem (duh, right?). What i the average temp where you are right now? What oil are you using? What engine do you have? How much oil is in there? Both not enough, and too much oil can cause that problem.

High oil pressure is not a bad thing. Low oil pressure however is. If you look at your gauge it will have a danger side only on the low side. Also, since your gmc is probably a 5.7 v8 and your srt4 is a 4cyl the oil pressures will be different.
The reason your oil pressure increases is becuase you are increasing the rpms of the engine causing it to circulate faster. All GM vehicles oil gauges actually move with the throttle unlike dodge. My truck will sit in the middle of the gauge the whole time. While in my buddys chevy oil pressure increases with RPMs. From what you are describing your truck is completely fine.

Also, oil pressure is not a reading of heat. Thats what your water temp gauge reads.
