You can't downgrade your dashboard. If you tried it would brick the system. If you like older dashboards, then seek FSD themes that look like them. There is a theme that looks like all of them.

You can use j runner to downgrade the dash but if you didn't rgh the xbox yourself and it was done professionally then I highly don't recommend doing this due to the fact that you would have to open the console up and buy a jr programmer and solder the wires to the Nand points and you will also be unable to play newer games. EDIT: and probably break your xbox like I have done many of times.
