I've just today got my jtag up and running again after quite some years so bear with me! I lost my hdd so had to basically start over.

I've installed xex menu 1.2 onto the hdd and it all works normal. But as I'm going to copy DVD to install a game it will just install the first couple of files and then finish. I've tried it on multiple games now and don't know what's wrong. If someone can help that would be great!

If I am correct, you are seeing these files:
$SystemUpdate
AUDIO_TS
VIDEO_TS
default.XEX
This means that your console is reading the discs as CD-ROMs instead of DVD-ROMs, this is caused by a damaged disc drive, or incorrect DVD Key stored in the NAND. You will have to Reflash the NAND with the correct DVD Key

Try installing the game through FSD, mine does the same thing but when I do it through FSD it always works for me.

The DVD key is defiantly correct

And the only files I get are the AUDIO and VIDEO

And when I put in a disk in when I'm not in xex it shows as a DVD so would the disc drive not be ok?

I don't have the info the jtagger sent me anymore stupidly, it's been so many years since I got it that I haven't kept any of the files when I've changed laptop. Just a question but I used it years ago with success and have not changed anything on it before boxing it up and leaving it to getting it back out and setting it up again so how could It have changed? I'm not the smartest guy so it's a geniune question to you and I'm hoping I can find a solution to this

It is most likely a problem with the disc drive itself. If you have never changed the DVD Key then is must be a hardware problem.

I thought that but I put in a DVD and it played it straight away
