Hello folks, basically here's my build:
Intel Corei7 Six Core Processor i7-4930K (3.4GHz) 12MB Cache
Case Model: Cooler Master HAF X V2 Black Tower
Motherboard - ASUS RAMPAGE IV BLACK EDITION: INTEL X79, SOCKET 2011, R.O.G
Memory (RAM) - 24GB KINGSTON HYPER-X FURY DUAL-DDR3 1600MHz, X.M.P (3 x 8GB)
Graphics Card - 3GB NVIDIA GEFORCE GTX 780 Ti - 2 DVI, HDMI, DP - 3D Vision Ready
1st Hard Disk - 240GB KINGSTON HYPERX 3K SSD, SATA 6 Gb/s (upto 555MB/sR | 510MB/sW)
2nd Hard Disk - 3TB WD CAVIAR BLACK WD3003FZEX, SATA 6 Gb/s, 64MB CACHE (7200rpm)
RM SERIES MODULAR 80 PLUS GOLD, ULTRA QUIET
Processor Cooling Corsair - H100i Hydro Series High Performance CPU Cooler
Thermal Paste - ARCTIC MX-4 EXTREME THERMAL CONDUCTIVITY COMPOUND
Now what I wanted to know is should I upgrade my card to the 980, 980ti or buy another 780ti and SLI it? Also another question I had is should I water cool my whole system? I've recently started recording audio scripts and my mic is fairly close to my case, I'm just worried if I get noise feedback at some point. Moving things around isn't a good option as space is a serious issue for my set-up haha. Or can people recommend extremely quiet fans. My third question which to be fair isn't really a concern on this site is, does any body know a 3 way clamp desk stand for my monitors... At the moment they're kind off all over the place and I'd like all 3 set at the same level. 2 screens at 23inch or 21.5 and the other is a 21. Now finally, my last one. Is it worth overclocking my system? Or am I getting enough from this as it is? 3.4ghz on my cpu... So in all fairness I'm not too into OC so I'm clueless here.

You could sell your current GPU and put the money into a GTX 980, that would probably be your best option apart from SLI 970s.
Depending on your power supply wattage you could go for the SLI, if you don't have sufficient wattage then go with the 980.

I'd wait for the release of the 390x and 980ti because it would most likely change prices around a little also I'd be against getting another 780ti as some games it's not performing how it should.

Is AMD actually any good for what I want? Like I haven't done research so I have no idea. I have although seen the rumors and specs of the 980ti, but I'm not sure if it'd be worth splashing out 700, or just get the normal 980 for about 300-400. Any advice on the water cooling aswell by any chance?

GTX 980 isn't worth it anyway. Wait for the 980Ti and new 300 series from AMD. We don't know what the prices will be like, just rumours, we won't know until they're released. Current cards might drop in price as well. Your PSU is fairly poor quality so it'd be worth replacing IMHO. Installing a custom loop won't necessarily reduce noise. Yes, overclocking is worth it, if you know what to do. If not, there's no need.

Well watercooling can reduce noise but it normally requires you to go overkill on the Rad space and by using a pump on low speed,
Air cooler's are generally quieter because it's less moving parts especially if you get a decent fans.
