Are you going to be overclocking or not? If not, any cheap cooler will be fine. I'm pretty sure the Enthoo Pro M doesn't come in white, so I'd suggest an S340 or something instead.
I'd avoid Haswell and stick with Skylake if possible, better to get the most recent components you can and getting DDR4 RAM now will make future upgrades easier.

Unlocked Skylake i7, decent mid ranged cooler, black/white colour scheme as wanted, SLI support, all within $1200. 250GB SSD for OS and some games, and 2TB HDD for mass storage. 1TB is fairly minimal these days, more storage never hurts and it's less than 50% extra cost for a 2TB over a 1TB, well worth it IMO.
