Need a new team for career mode, don't want one of the big teams want to build up the club?

When you say you don't want a big club, do you mean no prem clubs?
I would suggest Aston Villa as a good club if you are looking for a some what bad prem team to use.
If you are going lower leagues , I would suggest hull city, they were quite fun to use .

Use Pescara from the Serie B and move your way up to the Serie A.
